Pei Wei Asian Diner, LLC , doing business like Pei Wei Asian Kitchen , ( )) is an American chain of restaurants serving Pan Asian dishes, operating in more than 200 locations in the US and six international locations. Pei Wei dishes are made to order in the open concept kitchen using cooking methods like a shooting skillet. The restaurant offers guest adjustments that include vegetarian and gluten-free options.
The Pei Wei concept is defined by the restaurant industry as a casual fast, offering the convenience of counter service and cashier orders, paired with table service once the order has been placed. Pei Wei also has a designated door in the restaurant for the cashier to serve takeout food orders.

History
The restaurant chain was created as Pei Wei Asian Diner (PFCB) to compete in the casual fast-food restaurant segment with Pan Asian menu and fast, tailor-made service model, while PF Chang remains in the full restaurant segment -service. The first Pei Wei location opened in Scottsdale in 2000. The first location outside Arizona, the fourth in the chain, opened in Dallas, Texas, in December 2001. The company opened the first California location, sixth in the chain, in Irvine in June 2002. Pei Wei was able to open its 100th location in Little Rock, Arkansas in October 2006. In 2010, the company has 168 locations primarily in California, Texas, Arizona and Florida, with a growing presence in the Northeast and Midwest.
P.F. Chang's China Bistro, Inc. was acquired by Centerbridge Partners in July 2012, making P. F. Chang's China Bistro, an indirect subsidiary, wholly owned by Wok Parent L.L.C.
Over the years, Pei Wei's dining experience has grown to bring modern convenience. In July 2015, the company initiated a customer loyalty program in which customers accumulated points during each visit that could be used to redeem the prize, including free food. Pei Wei is among the first restaurant chain to receive Apple Pay, launching technology to all locations in August 2015. Customers can order orders online or via the Pei Wei mobile app, launched on the App Store and Google Play in September 2016 to allow subscribers find locations, view menus, messages, and pay.
Pei Wei opened their first campus campus location in August 2015 on the campus of Arizona State University. Later that year, Pei Wei opened their 200th location in Richardson, Texas in October 2015.
During 2016, Pei Wei withdrew operations in several states. As required under Ohio legislation, the company notified the Department of Employment and Family Services in Ohio on May 24 that it shut down all three of its restaurants and fired all affected workers in the state the following week. One month later, the company closed its three locations in the state of Louisiana.
In the same year, the company opened five restaurants in Florida, four in Texas and one in Arkansas.
Pei Wei conducted an extensive rebranding campaign during the same period. The new brand position, designed to tap into the national food trend toward healthier foods, includes quinoa launches on the menu, as well as the addition of salad categories and some smaller, lighter plate choices. In 2016, the company opened the Pei Wei Test Kitchen restaurant in Scottsdale to develop and test new menu items and collect public feedback in real time.
Pei Wei hired the restaurant industry veteran John "J." Hedrick as CEO in 2017. Hedrick previously served as COO of NPC International, the country's seventh-largest restaurant operator with 1,300 fast-food outlets with revenues exceeding $ 1.2 billion.
At the end of 2017, Pei Wei announced its separation from the parent company, P.F. Chang's China Bistro. This separation will lead the company to experience a slight change of name, as well as relocation of its headquarters from Scottsdale to Irving, Texas. This is followed by a revamped website with a strong focus to simplify the online ordering experience, and the relaunch of the Pei Wei Rewards program supported by the Punchh platform.
As part of their separation from P.F. International location
In 2011, Pei Wei announced an agreement with Alsea to open a franchise location in Mexico. The first location in Mexico opened in 2012. Due to lower performance than expected, all Mexico City locations are closed by the end of 2014. These three locations are in Mexico City.
In August 2012, Pei Wei opened its first location in Kuwait, operated by M.H. Alshaya Co. The same franchise opened its first location in Dubai, U.A.E. in April 2013. By the end of 2014, Pei Wei has five international locations: two locations in Kuwait, and three in the United Arab Emirates.
In September 2016, Pei opened its first East Asia location in South Korea in partnership with ELX Food & amp; Drinks. The Korean location at Starfield Hanam Seoul, the largest shopping mall in the country, is one of 11 locations planned to open by the end of 2017.
